A new site that I heard about recently is PortableThemes, which has nearly 2,000 images that you can use as wallpapers. Once you select a wallpaper, the site gives very clear, step-by-step directions for downloading and installing wallpapers, either via iTunes and the photo application on your Mac, or downloading it directly to your device and installing it that way.
