I'm writing an article for the magazine about streaming video for iPhone, iPad, and iPod touch. In addition to the YouTube app, there are several more apps that serve up content from video sharing websites. Dailymotion is probably the best one, since the Dailymotion site has quite a lot of content, and the app serves it up well. The $1.99 version is ad-free. Two apps, JustinTV and Ustream, offer up streaming video from sites that feature live streaming -- that is, the video your seeing is being shot live at that moment. Neither of the latter two have an iPad-specific version, whereas Dailymotion has quite a good iPad implementation.
